FOODIE FRIDAY!! 💛💛💛 Minestrone Soup: • 1 1/2 tbsp EVOO • 8oz Extra Lean Ground Beef • 1 White Onion (chopped) • 3 Carrots (chopped) • 2 Stalks Celery (chopped) • 2 Zucchini (chopped) • 2 cups Spinach • 3 Garlic Cloves (minced) • 2 tbsp Italian Seasoning • 1 tsp Sea Salt • 1/4 cup Tomato Paste • 3 1/2 cups Diced Tomatoes (canned) • 2 cups Mixed Beans • 2 Bay Leaves 💛💛💛 METHOD: •• In a large pot, heat oil and brown beef •• Add onion, carrots, celery, garlic, seasoning and salt. Cook until onions are translucent (about 7min) •• Add in tomato paste •• Add broth, tomatoes, beans, and bay leaves. Stir and bring to boil. •• Add Zucchini and Spinach.
