Foodie Friday: Butternut Squash Soup!

Being able to create something that is both nourishing and delicious is one of my favourite things to do when I have some free time. One of my favourite foodies to follow is Christina from @eatsbytee and so I asked her if we can feature recipes and tips from her one a week on Fridays! Here’s our first recipe!

BUTTERNUT SQUASH SOUP:

β€’ 1 Cubed Butternut Squash (3-4 c)

β€’ 1 Chopped Onion

β€’ 2 Celery Stalks

β€’ 3 Carrots

β€’ 1 Cup Cauliflower Florets

β€’ 1 Tsp Minced Garlic

β€’ 1/2 Cup Coconut Milk

β€’ 4 Cups Chicken Broth

β€’ 2 Tbsp Olive Oil

β€’ 2 Tsp Turmeric

β€’ 1 Tsp Nutmeg

β€’ Fresh Thyme

β€’ Salt & Pepper

METHOD:

β€’β€’ Heat oil in large pot

β€’β€’ Add all veggies and steam until soft

β€’β€’ Add spices and mix in well

β€’β€’ Add broth and coconut milk, bring to boil

β€’β€’ Use blender to purΓ©e soup

β€’β€’ Garnish and serve!
