Foodie Friday: Butternut Squash Soup!

Being able to create something that is both nourishing and delicious is one of my favourite things to do when I have some free time. One of my favourite foodies to follow is Christina from @eatsbytee and so I asked her if we can feature recipes and tips from her one a week on Fridays! Here’s our first recipe!

BUTTERNUT SQUASH SOUP:

• 1 Cubed Butternut Squash (3-4 c)

• 1 Chopped Onion

• 2 Celery Stalks

• 3 Carrots

• 1 Cup Cauliflower Florets

• 1 Tsp Minced Garlic

• 1/2 Cup Coconut Milk

• 4 Cups Chicken Broth

• 2 Tbsp Olive Oil

• 2 Tsp Turmeric

• 1 Tsp Nutmeg

• Fresh Thyme

• Salt & Pepper

METHOD:

•• Heat oil in large pot

•• Add all veggies and steam until soft

•• Add spices and mix in well

•• Add broth and coconut milk, bring to boil

•• Use blender to purée soup

•• Garnish and serve!
